The late Anthony Bourdain after tasting the dish said that it would be on his last meal’s menu.
I removed the marrow from the bone using my knife and spread it on the crispy dark bread, adding on top of it some parsley salad and salt.
The buttery flavour of the marrow blended nicely with the acidity of the parsley salad, the salt and the hearty bread.
I could have easily eaten another serving.
